Oven Fried Panko Chicken Cutlets

Last night we had Trader Joe's American Style Kobe Burgers, it was pretty damn good that we totally forgot about blogging it until we were done eating.  So for tonight I wanting something healthier. Since J loves chicken cutlets I decided instead of shallow fried it in oil I will just bake it. I keep the seasonings pretty simple on the breading; powered garlic, dried parsley, dried basil, a little crushed red pepper and salt/pepper. For sides we had mac and cheese with broccoli. Instead of drowning the pasta in a heavy cheese sauce I only use a table spoon of butter, 2 % milk and part-skim mozzarella/cheddar.
