White Chocolate Berry Coffee Cake

Stop and Shop was having a buy one get one free for the small package of blackberries and raspberries so of course I had to get them. I ate some for breakfast yesterday and used the rest to make this coffee cake.

  • 1 2/3 cup flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 cup butter, softened
  • 1/2 cup milk
  • 1 eggs
  • 1/2 cup sour cream
  • 2 cups fresh or frozen berries of your choice
Streusel Topping
  • 1/2 cup packed brown sugar
  • 1/2 cup white chocolate chips 
  • 1/3 cup flour
  • 1/4 cup butter, softened
Preheat the oven to 350 degrees F. Grease the inside of a 8x8 pan. 

Cake part- In a large bowl, cream together all the wet ingredients except the berries then add all the dry ingredients. Mix until well incorporated. Fold in the berries into the cake batter. Pour the berry cake batter into a greased 8x8 pan. 

Streusel part- In a small bowl, mix together the streusel ingredients then sprinkle the mixture on top of the berry cake batter. 

Bake for 55 to 60 minutes or until toothpick inserted in the middle of the cake comes out clean. Let it cool for at least 10 minutes before serving.
