Blackberry Apple Muffins

Tomorrow I'm going with my cousin T to her bridal salon appointment (awww..my little cousin is growing up). Since I'll be passing my parent's house and I was bored at 10 PM, I wanted to bake something that's quick and easy to bring to them. After looking in the fridge I found the fresh blackberries I got from TJ's earlier this week that I totally forgot about and also saw a Fuji apple. After looking around online I found a blackberry muffin recipe on Simply Recipe. Since I can never just follow a recipe I decided to change it up a bit. 

Blackberry Apple Muffins
  • 1 1/2 cup flour
  • 1 cup almond meal from Trader Joe's 
  • 1 tsb baking soda
  • 1/2 tsb baking power
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsb lemon zest
  • 1 cup sour cream (I used reduced fat)
  • 1 tsb milk
  • 1 sticks, 8 tbs melted butter
  • 1 tsb vanilla
  • 1 1/2 cup fesh blackberries (I added a little more)
  • 1 1/2 cup diced apple
  • sprinkle a thin layer of sugar on the muffins before baking (optional)
Preheat the oven to 400 degrees F. Make sure the rack is in the middle of the oven. Grease or line muffin pans. The batter makes about 18 muffins. 

Mix together all the dry ingredients in a bowl. In another bowl mix the wet ingredients together until well blended (excluding blackberries and apple).  Stir the wet and dry ingredients until the batter comes together. DO NOT over mix! Stir in apples, then the blackberries. Be gentile so you don't turn the berries into mush. Divide the batter evenly into the muffin cups and sprinkle some sugar on top.  Bake for 18 mins or until a toothpick is inserted into the center of the muffin and it comes out clean. Let it cool for about 5 mins before you take the muffins out of the pan.

Hiyashi Chuka- Japanese Cold Noodles

I've been eating a lot of oily foods this week so was craving something light. Decided to make some cold noodles. I used Myojo Chukazanmai brand instant noodle pack. It comes with the dried noodles, sesame dressing and Japanese mustard. You can put pretty much whatever you like on top of the noodles. Today I used carrots, cucumber, ham, kani and egg on a bed of chopped romaine lettuce.

Ready Made Grilled Chicken Ravioli

Even though J didn't like the lobster ravioli we got last time from BJ's, decided to give this Grilled Chicken and Mozzarella a try. I also made garlic bread with cheese (roasted garlic). For sauce I just used the Newman's Own Marinara. I did thin out the sauce with some chicken broth since it was really thick. We were surprised by how good the ravioli were. The filling was flavorful with chucks of chicken. With the sauce it really tasted like chicken parm ravioli!

Lemon Pepper Chicken Pasta

For some reason I was extremely tired when I got back from work today. Took and nap and by the time I woke up it was already 6:30 PM. Oops, my 10 min nap turned into an hour. I didn't feel like making anything difficult and after looking around the fridge I found a bunch of lemons and decided to just make lemon pepper chicken. It's really simple; lemon juice/zest, garlic, parsley, chicken, chicken broth, salt and pepper.

Panko Breaded Cod plus Berry Chocolate Cake

I went to Trader Joe (TJ's) last night and saw these panko breaded cod filet.  Normally I get the fish sticks for J during Lent but I thought I should change it up a little. I also got the frozen uncooked blue rock shrimps from TJ's. I was surprised by how good the cod filets were. J not only finished his but also eat some of mine since i couldn't finish. For sides i made mac and cheese, shrimps, green beans and carrots. I marinaded the shrimps in lemon juice/zest, garlic, fresh parsley, salt and pepper then broiled them in the oven. 



Since tomorrow is our nephew Max's 1st birthday I made a cherry/raspberry/strawberry chocolate cake with cream cheese frosting. I also made carrot cake whoopie pies but don't have pics for it just yet since I haven't put the frosting on them.

Filet Mignon

What happens when the Filet Mignon goes on sale at Stew Leonard's? I stock up! It happens to be on sales this week for $9.99, not as good as the $5.99 a lb whole tenderloin I got over Christmas but it's still an awesome deal. 



J had an extra baked potato loaded with cheese and butter since he can afford the calories.

Chocolate Banana Bread w/ White Chocolate Ganache

J always wants bananas when we go grocery shopping but never ends up eating them so I end up having to use them up in my baking. Normally I make a Banana Apple Strudel muffin but tonight I decided to change it up and went the chocolate route. He like bananas but doesn't eat banana bread (once again, he's damn picky!) so I'm bringing half to work and half to my parents tomorrow.

Chocolate Banana Bread
1/2 cup unsalted butter, soften
1 cup white sugar
2 eggs
1 cup mashed bananas
1 tsb vanilla
1 cup flour
1/2 cup ground Almond Meal (mine was from Trader Joe)
1 tsb baking powder
1/4 tsb baking soda
1/4 cup coco powder
1/2 cup sour cream
1/2 cup semisweet chocolate chips

White Chocolate Ganache
I used the recipe from Joy of Baking, click here for recipe. 

Preheat oven to 350 degrees F. Lightly grease a 9x5 loaf pan (you can also use muffin tins).

Cream butter w/sugar then add eggs and vanilla. Mix in bananas and sour cream. Stir in flour, almond meal, baking powder, baking soda, coco powder until the batter is smooth. Pour batter into loaf pan and bake for 40 minutes or until a toothpick (unused of course..hahaha) inserted and comes out clean. Cool the banana bread in the pan for about 20 mins then turn the bread out and wait until it completely cools then pour the decadent ganache all over the banana bread.

Lobster Ravioli

When we were at BJ's we bought a pack of the lobster ravioli from Legal Seafoods. Initially I wanted to do a brown butter sauce but remembered that I still have a small carton of heavy cream in the fridge. The cream sauce consist of cream, milk, garlic, shallots, parsley, diced tomatoes, Herbes de Provence, lemon juice/zest, salt and pepper.

Fried Pork Chop

While J was having a meat free day, I was having fried pork chop at my mom's. I know it's kind of mean but hey, I'm not Catholic and how can you resist mom's cooking. Something like this is typically eaten during lunch (便當, Bain Don), similar to a Japanese Bento. Since Taiwan was a Japanese colony for 50 years (1895-1945) after Japan defeated the Qing Dynasty some of the Taiwanese words are similar to Japanese.

My mom marinaded the bone in pork chops in a soy-scallion marinade for over 8 hours then breaded it in potato starch and panko. Saute baby bok choy, pickled mustard green, braised minced pork with egg.
