Pan Seared Chicken Breast

Lately we've been on a beef kick so thought it's about time to change it up and have something a little lighter. I marinaded the chicken with apple cider vinegar, garlic and Everyday Seasoning from Trader Joe's. For sides I just made the packaged rice sides that you add butter and water to and also stir fried mixed veggies.

Lobster Salad

My co-worker Morganna gave me two broiled lobsters today so decided to make my own lobster salad. There are so many different recipes out there for lobster salad but today I kept it pretty simple. Mayonnaise,  ground pepper, salt, shallots, parsley, Trader Joe's Everyday Seasoning and lemon juice. It was freaking delicious!! Made this rainy day a little less depressing.

Lemon Shortbread Cookies

I was craving something lemony yesterday so after work I made some cookies. The shortbread cookie recipe is inspired from my favorite Food Network personality, Ina Garten but I made several changes. Adding lemon zests and lemon extract then frost the cookies with a lemon frosting. The cookies are not overly sweet and are great with tea.

Oven Fried Panko Chicken Cutlets

Last night we had Trader Joe's American Style Kobe Burgers, it was pretty damn good that we totally forgot about blogging it until we were done eating.  So for tonight I wanting something healthier. Since J loves chicken cutlets I decided instead of shallow fried it in oil I will just bake it. I keep the seasonings pretty simple on the breading; powered garlic, dried parsley, dried basil, a little crushed red pepper and salt/pepper. For sides we had mac and cheese with broccoli. Instead of drowning the pasta in a heavy cheese sauce I only use a table spoon of butter, 2 % milk and part-skim mozzarella/cheddar.

Banana Bread with Walnuts

For some reason we always end up having overripe bananas around. I hate throwing away food so the best way to use them up is making banana bread/muffins or whatever else I can think of. I have so many different banana bread recipes but for today I'm just sticking to the basic (ok, with the addition of walnuts since I have some left over from some cookies I made).

Banana Bread with Walnuts

  • 2 cups flour
  • 1 tsb baking soda
  • 1/2 tsb baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup room temperature unsalted butter
  • 3/4 cup brown sugar
  • 2 beaten eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups of mashed overripe bananas
  • 1 cup chopped walnuts, reserve a hand full for decoration


Preheat oven to 350 degrees F. Lightly greased a 9x5 loaf pan.

Combine flour, baking soda, baking powder, salt, cinnamon in a bowl. In a different bowl, cream the butter and brown sugar until light and fluffy. Add mashed bananas, vanilla and eggs until combined. Add the flour mixture to the wet banana mixture and then mix until combined, do not over mix. Pour the mixture to the loaf pan sprinkle the reserved walnuts on top and bake for 45 minutes or until a toothpick inserted into the center of the bread comes out clean.
