Bacon Cheese Chicken Roulade

While I was cleaning out the pantry today I found a box of Stouffer's Stuffing Mix. Normally I serve some sort of chicken breast dish with stuffing so tonight is no exception. Instead of just pan fried skinless, boneless chicken breasts; I decided to stuff the chicken breasts with lots of cheese and bacon! Since I didn't have chunks of cheese, I just used the shredded kind. You can also use any sort of herbed cream cheese instead of shredded cheese.

Bacon Cheese Chicken Roulade
Serves 2 
  • 2 boneless, skinless chicken breast 
  • 3 stripes of your favorite bacon cut into little pieces
  • 1/4 cup shredded cheddar
  • 1/4 cup shredded Mozzarella
  • 3 tbs of fresh bread crumbs (if you use dry breadcrumb, soak in a little milk first)
  • McCormick Grilled Mates Roasted Garlic & Herb seasoning
  • 1/2 cup water or chicken broth
Optional crunchy topping: mix together 1 tbs grated Parmesan cheese, 1 tbs bread crumbs. 

Pound the chicken breast to about 1/4 inch thick. Lightly season both sides of the pounded chicken breasts with the Roasted Garlic and Herb seasoning. In a small bowl, mix together the bacon pieces, cheeses, bread crumbs. Divide the cheese/breadcrumbs mixture evenly onto the pounded chicken breasts. Roll up the chicken breasts like a "Swiss Roll" and then secure the ends with tooth picks (so all the cheese will not ooze out). Place the chicken roulades in a lightly oiled pan, pour the chicken broth in pan. At this point you can decide wether or not you want to sprinkle the crunchy topping on the chicken. Bake on 350 degrees F for about 40 minutes or until the juices run clear.

Pictures from Previous Cruises

Since I didn't have a lot of pictures from my recent Majesty cruise I thought I would post some from the previous one but then I also have pictures from other cruises so this post is just going to be a picture post of all my favorite cruise pictures. So far I've only been on Royal Caribbean so obviously all these pictures are from my RCCL trips. I'm hoping in the future I will be able to try out different cruise lines but it will take a little time to convince J since him and his parents are Loyal to Royal. We did almost booked Carnival this summer but then the itinerary didn't work for us due to J's work schedule.

Back to Majesty of the Seas 海洋帝王號

J and I originally weren't sure if we can go on vacation this summer due to his new job but his boss was nice enough to give J a week off. We were looking at 7 night cruises or a short weekend trip to Vegas but then I found really good rates on airfare (Southwest) and a short cruise (4 nights, Nassau/Coco Cay/Key West) last minute.

The cruise is on Majesty of the Seas on our favorite cruise line (actually the only line we have been on but I am open to others), Royal Caribbean. It is the same ship and itinerary we did on our engagement cruise almost 3 years ago. I was a little hesitant to book since I was afraid that it will suck after being on the Allure (biggest ship in the world at the moment) but then I quickly reminded myself that it will still be a fun vacation as long as I'm with the one I love. Since J and I have been to these ports multiple times, we didn't really take a lot of pictures.
